Fresh Pasta
Pasta is so easy to make and will make any cook look like a pro! Whether you are making spaghetti or lasagne sheets, that little bit of extra love will be evident in your dish.

Makes: 4 servings
Ingredients
2 1/2 cups of plain flour
1/2 tsp salt
4 eggs
extra flour
Method
On the bench top make a mound with the flour.
Make a well in the centre and crack the eggs into it.
Add the salt and combine the mix.
Knead the dough until the ingredients bind together. Kneading will encourage the moisture from the eggs to come through to make the dough managable. Do not over handle the dough.
Cut the dough into 4 even portions and wrap each in cling wrap.

The dough will need 30mins to rest before it should be used.
If you are planning on using the dough later on or the next day, wrap the cling wrapped portions in a wet teatowel in the fridge.
Once the dough has rested, thinly roll it out using a rolling pin.
Set up your pasta maker, turning the dial to the largest setting.
Flour the pasta maker so the dough will easily pass through.
Feed the dough through, making the pasta sheet thinner each time.
When you have made the pasta the desired thickness, feed it through the spaghetti attachment.

Dust the strands of spagetti with flour to prevent them sticking together.

Repeat until all the dough has been used.
Cook straight away or hang to dry for later use. *Spaghetti can also be stored in bird nest arrangements but make sure it is left somewhere dry.

If you do not own a pasta maker the latter steps can be done with a roling pin, knife or pizza cutter.
To cook, boil in salted water for 5 mins and enjoy.
