Fresh Pineapple and Two Rice Vegetables with Coconut Dressing
This is a salad type meal and includes vegetables, nuts, rices, and fresh pineapple.
To top this off, I have added a fragrant coconut dressing to this meal.
It is quite a lot of work for a salad, however it is worth it as it is a very different salad/meal.
Make sure your pineapple is sweet as my meal was slightly spoiled by a very sour fresh pineapple.
For a non vegetarian meal, add some cooked chopped chicken pieces.
Preparation Time: 20 minutes
Cooking Time: 40 minutes
Makes: 6 servings
Ingredients
½ small pineapple
½ cup white rice
½ cup brown rice
150 g broccoli, chopped
150 g cauliflower, chopped
150 g snow peas, halved
50 g unsalted cashew pieces
30 g flaked almonds, toasted
50 g dried currants
COCONUT DRESSING
1 tbsp oil
½ tsp cumin ground
½ tsp turmeric
1 tbsp lemon juice
100 ml coconut cream
1 tsp sugar
1 tbsp water
Method
In separate pots, put the brown and white rice into boiling water and cook until tender -I always turn mine off a few minutes before as it goes on cooking after the heat is off.
Drain and allow to cool.
Meanwhile boil the cauliflower, broccoli, and the snow peas until JUST tender. Drain and rinse under cold water.
Combine the rices in a large bowl.
Add the vegetables and the remaining ingredients and mix carefully.
For the coconut dressing
Heat the oil, add the cumin and turmeric and stir until it is fragrant.
Remove from the heat and add the coconut cream, lemon juice, sugar and water, and mix.
Add this to the rice mixture and serve as a salad or a main.
