Fresh Summer Salad

During the warmer months it is often a bit sweat-inducing to hunch over the oven to cook a warm dish, so making a fresh, simple salad is a healthy, filling and a much less sweaty affair.

Preparation Time: 15-20 minutes
Cooking Time: None
Makes: 3-4 servings

250 grams of loose spinach
5 medium size field mushrooms
1 large tomato (Beefsteak or Grosse Liese varieties work well)
1 white onion
1 shallot
3 small garlic segments
150-200 mL White wine or apple cider vinegar
A pinch of salt and pepper



Wash the spinach, tomato and mushrooms. Peel the onion, shallot and garlic.

Cut all ingredients except the spinach leaves into slices. You may want to make the garlic and onion pieces especially small to allow for an even distribution of flavour and 'bite'.

Put the tomato and garlic into a bowl and add the vinegar. Let the mixture sit for about ten minutes to allow the acidity of the vinegar and tomato to nicely mellow and air. This will provide a much richer taste in the end.


After about ten minutes add the mushroom, spinach, shallots and onions. Mix thoroughly.

Serve in a bowl. Add some garnish and/or salt and pepper depending on your preferences. Bon appetite!
