Fresh Thai Chicken Salad

A fresh, easy salad filled with vibrant colour and tangy flavour. It is a quick dinner to prepare on a week night or a crowd-pleaser as a side salad to a spicy Thai feast.



Preparation Time: 20 minutes
Cooking Time: 5 minutes
Serves: 2-4

Ingredients
400 grams shredded roast chicken
4 tablespoons sweet chilli sauce
1/2 cup chopped coriander
6 snow peas snow peas
1 cucumber
1 carrot
10 cherry tomatoes quartered
1 pack Vermicelli noodles
2 limes or lemons
Peanuts to garnish
1 teaspoon Thai seasoning (optional)



Method
  • Chop the peanuts or blitz in a blender for a few seconds and set aside.

  • Juice both lemons or limes and pour half over the shredded roast chicken.

  • Sprinkle one heaped teaspoon of Thai seasoning over the chicken.

  • Pour at least four tablespoons of sweet chilli sauce over the chicken and stir through and set aside.

  • Slice and cut cucumber, carrot, snow peas and cherry tomatoes and chop coriander.
  • Pour the remaining lemon or lime juice and stir through.



  • Add boiling water to the Vermicelli or rice noodles and stir through with a fork for a few minutes until cooked and strain with a sieve

  • Heat the chicken in the microwave on medium and stir through until completely heated
  • Add to the chopped vegetables and stir through with the vermicelli noodles

  • Top with crushed peanuts and serve
