Fresh Thai Chicken Salad
A fresh, easy salad filled with vibrant colour and tangy flavour. It is a quick dinner to prepare on a week night or a crowd-pleaser as a side salad to a spicy Thai feast.

Cooking Time: 5 minutes
Serves: 2-4
Ingredients
400 grams shredded roast chicken
4 tablespoons sweet chilli sauce
1/2 cup chopped coriander
6 snow peas snow peas
1 cucumber
1 carrot
10 cherry tomatoes quartered
1 pack Vermicelli noodles
2 limes or lemons
Peanuts to garnish
1 teaspoon Thai seasoning (optional)
Method
Chop the peanuts or blitz in a blender for a few seconds and set aside.
Juice both lemons or limes and pour half over the shredded roast chicken.
Sprinkle one heaped teaspoon of Thai seasoning over the chicken.
Pour at least four tablespoons of sweet chilli sauce over the chicken and stir through and set aside.
Slice and cut cucumber, carrot, snow peas and cherry tomatoes and chop coriander.
Pour the remaining lemon or lime juice and stir through.
Add boiling water to the Vermicelli or rice noodles and stir through with a fork for a few minutes until cooked and strain with a sieve
Heat the chicken in the microwave on medium and stir through until completely heated
Add to the chopped vegetables and stir through with the vermicelli noodles
Top with crushed peanuts and serve
