Fried Basa Fish with Garlic Greens

Here's an easy recipe, which you can enjoy as part of a gluten-free and low-carb diet. Basa fish is also one of the most sustainable types of fish available in the UK, so pass on the salmon and invest in something which is better for our waters.

Preparation Time: 2 minutes
Cooking Time: 15 minutes
Makes: 2 servings

2 basa fillets
1 avocado
Half tsp black pepper
1 lemon
2 thyme sprigs
1 rosemary sprig
2 garlic cloves
5 frozen spinach cubes

Finely chop the garlic.

Add the seasoning, garlic and oil to a large saucepan and cook over a low heat for 2 minutes.

Add the fillets (one by one), and season with the chilli. Cook for 2 minutes.

Squeeze over the lemon and cook for a further 6 minutes before flipping the fish over and repeating the last two steps.

Add the cubes of spinach, cook until they have melted - 5 minutes.

The spinach should have wilted and the fish cooked through. Turn the heat to the lowest setting and leave to stay warm whilst you prep the avocado

Slice the avocado in half and peel the skin off. Make small slices into the flesh and serve on a plate.

Take the fish and green off the heat.

Serve alongside the avocado.
