Fried Haloumi Salad

Fried haloumi is one of my favourite things to eat in summer. It's perfect in salads, with fried eggs or on its own drizzled with lemon. In this salad I have paired it with ripe tomatoes, crunchy beans and fresh parsley.
The parsley is less of a garnish and more of a main component in this dish-dont be shy when snipping that herb!



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
90g haloumi
1/2 bunch parsley
16 cherry tomatoes
1 cup green beans
1 medium zucchini
1 lemon
1 tbsp olive oil
Seaoning



Method
  • Top and tail then quarter each bean. Add to a hot oiled pan with the sliced zucchini. After 3 minutes add the cherry tomatoes whole.


  • In another non stick pan add the haloumi that should be sliced into rounghly 12 pieces. Fry for 3 mintues then flip and cook the other side until golden and starting to blister.


  • Whilst the haloumi is cooking snip the parsley into the pan with the vegetables. Cook until it is just starting to wilt and the vegetables are browning.
  • Grab kitchen scissors and snip the bunch, much easier then chopping.


  • Divide vegetables on to two plates, add the haloumi and squeeze half a lemon on to each dish. Season with pepper and only salt if needed-haloumi is quite salty.



  • Enjoy this simple summer salad.
