Fried Noodles Turkey and Bok Choy
I have been using turkey mince a lot in recipes lately as I find it has a "richer" taste than chicken mince, and has very little fat.
This recipe is easy to make and will have your family/visitors asking what is in it!
Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serves: 3 - 4
Ingredients
90 - 100 g Ramen noodles (or noodles of choice)
2 large eggs, beaten lightly
1 medium onion, chopped finely
2 cloves garlic, crushed
2 tsp ginger
500 g chicken mince
1 bunch bok choy, coarsely chopped
About 40 ml soy sauce
About ½ cup coriander, chopped
1½ cups celery, chopped
Method
Cook the noodles as per packet instructions and turn off a minute or two before they are done - leave in hot water until you are finished cooking the rest of the meal - or do this half way through meal.
Add a bit of oil in a wok and half of the egg.
Swirl round so that it is a thin omelette, and repeat with other egg.
When cool enough, roll these tightly
Slice thinly.
Heat a bit more oil in the wok and fry the onion, garlic and ginger until the onion softens.
Add the minced turkey, and cook until it is cooked through - this will be about 15 minutes.
Add the chopped celery, bok choy, soy sauce and coriander, and cook till the bok choy is just tender.
Stir in the drained noodles and serve topped with the omelette slices.
Also good heated up the next day in the microwave.
