Fried Noodles Turkey and Bok Choy

I have been using turkey mince a lot in recipes lately as I find it has a "richer" taste than chicken mince, and has very little fat.

This recipe is easy to make and will have your family/visitors asking what is in it!

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serves: 3 - 4

Ingredients
90 - 100 g Ramen noodles (or noodles of choice)
2 large eggs, beaten lightly
1 medium onion, chopped finely
2 cloves garlic, crushed
2 tsp ginger
500 g chicken mince
1 bunch bok choy, coarsely chopped
About 40 ml soy sauce
About ½ cup coriander, chopped
1½ cups celery, chopped

Method
  • Cook the noodles as per packet instructions and turn off a minute or two before they are done - leave in hot water until you are finished cooking the rest of the meal - or do this half way through meal.

  • Add a bit of oil in a wok and half of the egg.

  • Swirl round so that it is a thin omelette, and repeat with other egg.

  • When cool enough, roll these tightly


  • Slice thinly.

  • Heat a bit more oil in the wok and fry the onion, garlic and ginger until the onion softens.

  • Add the minced turkey, and cook until it is cooked through - this will be about 15 minutes.


  • Add the chopped celery, bok choy, soy sauce and coriander, and cook till the bok choy is just tender.


  • Stir in the drained noodles and serve topped with the omelette slices.

  • Also good heated up the next day in the microwave.
