Fried Prawns with Salted Egg Yolk

Crispy pan-fried king prawns coated in fragrant garlicky salted egg yolk.



Preparation Time: 1 hour
Cooking Time: 20 minutes
Makes: 4 servings

Ingredients
500g peeled king prawns, deveined

Marinade
1/2 tsp salt
1 tsp soy sauce
1 egg white
1 tbsp cornstarch
a dash of white pepper

50g cornflour, for prawn coating
4 cooked salted duck egg yolk, mashed
1 red chilli, chopped
2 cloves garlic, chopped
cos lettuce leaves, to serve

Method
  • Mix prawns with all the marinade ingredients. Leave to marinate for 1 hour.



  • Heat enough oil in a frying pan, dip the marinated prawns in cornflour to coat. Pan fry on high heat for 1 minute until golden brown.



  • Heat 2 tbsp of oil over high heat. Saute the garlic and chilli until fragrant. Add salted egg yolk, stir constantly to prevent it from burning.



  • Once it is bubbling, add in the fried prawns. Stir to coat prawns in the sauce.



  • Arrange lettuce leaves on a serving dish, arrange prawns on top and serve immediately.
