Fritz and Corn Fritters

Fritz and corn fritters are easy to make and are tasty as a snack or breakfast. Fritz has various names in different states and you may be used to it being called devon, polony or luncheon meat.



Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 6 medium sized fritters

Ingredients
1 cup SR flour
1 egg
250 ml milk
120g piece of fritz
1/2 cup sweet corn kernels, drained
Margarine or oil for frying.

Method
  • Sift SR flour into medium sized bowl and make a well in centre.
  • Beat egg and mix with the milk.
  • Tip egg and milk mixture into the well.
  • Beat well with a wooden spoon for about 1 minute.
  • Beat well with a wooden spoon

  • Cut fritz into thick slices and then cut into cubes.

  • Cut fritz into cubes

  • Add fritz and corn to fritter batter and mix.
  • Heat frypan and melt margarine or heat oil to cover base.
  • Cook 3 fritters at a time.
  • Turn with egg slice when bubbles can be seen.

  • Fritters ready to be turned

  • Cook until light brown.
  • Remove from pan and drain on paper towel.
  • Serve with sauce,chutney or relish of your choice.
