Frozen Hot Chocolate With Marshmallows And Cocoa Nibs

This is a summer dessert twist on the steaming winter warmer. I love drinking hot chocolates in the winter and eating chocolate ice cream in the summer, so I combined my two chocolate loves in this fun, tasty dessert. I hope you enjoy it as much as I do.

Preparation Time: 10 minutes
Cooking Time: 6 hours (including time to set)
Serves: 2

Ingredients
2 tbsp cocoa (good quality)
2 tbsp raw sugar or stevia
1 tbsp hot water
1/2 cup milk (lactose free if required)
4 tbsp mini marshmallows
2 tbsp cocoa nibs

Method
  • Put the cocoa, sugar (or stevia) and hot water in a mug and stir to combine.
  • Pour the milk into the mug, continually stirring to combine the ingredients.

  • Heat in the microwave for 50 seconds, so that the mixture double in size, being careful not to let the mixture boil over. It will reduce in size once taken out of the microwave.

  • [Image3 The hot chocolate should rise when it is heated in the microwave. Be careful not to let it boil over.]

  • Pour into 2 semi flexible plastic containers and place in freeze for 6 hours or until set.

  • [Image4 These plastic containers are great for turning out the frozen hot chocolate as they are slightly flexible.]

  • Place 1 tbsp of mini marshmallows into the base of each of 2 cocktail glasses. Turn out a frozen hot chocolate and place on top of the marshmallow layer. Add 1 tbsp of mini marshmallows on top and around the frozen hot chocolate and sprinkle on the cocoa nibs.
  • Serve immediately. Enjoy.

    Tips
  • Substitute with good quality drinking chocolate and chocolate nibs for an extra sweet dessert.
  • Add frozen raspberries for a sour element.
  • Using flexible plastic containers will ease turning the frozen hot chocolates out when frozen.
  • Place the container in warm water for 10 seconds to release the Frozen Hot Chocolate if it is stuck.
  • Use the milk only setting on a coffee machine or a milk frothing machine to add the milk for a frothy frozen hot chocolate surface.
