Frozen Mango and Peach Slice with Fresh Passionfruit

This dessert is so yummy, I am glad it is in the freezer and rather difficult to cut, or I would be eating it non stop.

I didn't realise it would make quite so much, and in order to cut the slice, I need to take it out of the freezer for about 10 minutes.

It has fresh mangos, peaches and passionfruit with two different layers/flavours, and tastes divine!

Preparation Time: 40 minutes plus overnight
Cooking Time: 10 minutes
Makes: 10 servings

For the Peach Vanilla Slice
4 very ripe peaches
200 ml coconut milk
100 ml yoghurt
1/3 cup caster sugar
1 vanilla bean, split in half
3 fresh passionfruit -pulp
Shredded coconut (Optional)

For the Mango Coconut Cream
2 whole mangoes
100 ml yoghurt
300 ml coconut cream
1/3 cup caster sugar

For the Mango Coconut
Line a small loaf tin with baking paper.

Take the mango flesh from the fruit.

This is the best way to get the mango flesh off the pip

Put this in a blender with the remaining ingredients.


Puree the mixture until it is smooth, and then pour it into the loaf tin, filling about half way or perhaps a bit more.


Put into the freezer for an hour.

Remove from the freezer, and stir. Return it to the freezer for about 4 hours.

For the Peach Vanilla Cream
Drop the whole peaches Into a saucepan of boiling water, and boil for four minutes.

Strain them and set them aside to cool. When cool enough peel the peaches, cut in half and remove the stones.


Add the peach flesh to the blender with the remaining ingredients, and blend till it is smooth and mixed.


Chill this mixture thoroughly in the fridge and when the mango layer has set, fill the loaf tin with this mixture on top.


Return it to the freezer.

Allow the slice to set, preferably overnight.


Defrost it a bit before you want to serve it and slice into slices -do not cut them too thick as it is quite a high slice.

It is easier if you use a hot knife.


Decorate with anything or any fruit you have on hand, and I had some blackberries and lychee left over, so I served it with these.
