Frozen Strawberry Yogurt
So simple and sweet, and I want to believe that its healthy too!
This recipe can be adapted with any fruit puree, you need around 450 gm to 500 gm of puree with seeds removed. If your fruit is very sweet then the amount of sugar can be reduced.
If you don't have an icecream machine then GET ONE! They are really great, mine sells for around $100. They pay for themselves in no time.
Preparation Time: 10 minutes
Freezing Time: 25-30 plus 120 extra minutes
Makes: 1.2 ltrs
Ingredients
500 ml Yogurt
250 ml Cream
600 gm Fresh or frozen strawberry
3/4 cup Caster sugar
1/2 tsp Vanilla extract
Fresh berries to serve
Method
Puree the strawberries in a food processor or blender.
Strain through a fine sieve to remove the seeds.
Mix the yogurt, cream, sugar and vanilla.
Pour the yogurt mix into the icecream machine and turn on. If you dont have an ice cream machine then pour mix into a tray and freeze for several hours. Remove from the freezer and beat until smooth. Refreeze until firm.
After 15 minutes when the mix has chilled and firmed slowly pour in the strawberry puree and churn for another 5-8 minutes.
When the mix is firm and well chilled you can add whole fruit pieces if desired.
Tip into a container and place in the freezer to firm.
To serve using an ice cream scoop, place 3 scoops on a serving plate or bowl, dress with fresh berries (or eat straight from the freezer).
