Fruit And Nut Muesli

Making this delicious muesli will allow you to control the amount of sugar that goes into your food. The supermarket brands marked low fat are usually high in sugar. This Fruit and Nut Muesli is the best of both worlds; high in nutrition and high in taste.

Preparation Time: 15 minutes
Cooking Time: 60 minutes
Makes: 4 large jars

8 cups of rolled oats
3 cups of bran
400g fruit and nut
2 tbs cinnamon
4 tbs maple syrup
5 tsp sugar
1 tbs oil
2 tbs butter

Preheat the oven to 180 degrees.
In a small saucepan melt the butter, oil and maple syrup.

On a large tray, spread the oats and bran evenly.
Drizzle the syrup mixture over the oats and sprinkle the sugar and cinnamon on top.

Put the oats into the oven and bake for 15 mins.
Take them out of the oven and toss so the oats brown evenly.
Return them to the oven for another 15 mins and toss.
Repeat 4 times so the oats spend a total of 60 mins in the oven.
Once the oats are toasted, remove from the oven and allow to cool. The syrup would have formed toffee like clusters in the mix.
When the oats have cooled, put them in a large bowl and mix in the fruit and nut.

Stir well and divide into portions of your liking.
Store in an air-tight container.

Serve with either milk or yoghurt.
