I love it when the market is in town as they usually have a stall selling delicious baklavas made with different nuts, fruit, paste and honey. But for when they're away, I can always make my own. Based on the brands I used, each baklava is about 225 calories.

Makes: 12 servings
Ingredients
9 sheets of filo pastry
100g chopped hazelnuts
110g pitted dates
50g margarine
50 sultanas
50g dried pineapple
50g apple rings
100g dried figs
1 Granny Smith apple
1 tsp ground cinnamon
2 tbsp clear honey
Method
Pre-heat oven to 150 ༠C/ 130 ༠C fan/300 ༠F/2 Gas.
Mix dates, apples, pineapple, figs, and cherries, and blend in a food processor.
Add the sultanas, hazelnuts, and cinnamon.
Layer three sheets of filo pastry in a baking tray, brushing each with melted butter.
Layer half the fruit mix on top.
Layer three sheets of filo pastry in a baking tray, brushing each with melted butter.
Layer the remaining fruit mix on top.
Layer three sheets of filo pastry in a baking tray, brushing each with melted butter.
Slice into 12 and bake in the oven.
Warm the honey and spoon over the top.
