Fruit Salad Icy Poles

These tasty fruit salad icy poles are a great snack and will help beat the heat on a hot summer day. The kids will love to help assemble the rainbow colours of this delicious icy pole. These cool snacks are also a great way to introduce different fruits to fussy eaters.



Preparation Time:10 minutes
Cooking Time: 6 hours or until set
Serves: 6

Ingredients
1/2 ripe pineapple or 250g frozen pineapple
250g strawberries halved
250g blueberries
2 ripe bananas mashed
4 ripe kiwi fruit mashed

Method
  • Place pineapple into a blender and purée until smooth.
  • Pour pineapple mixture into moulds.
  • Add a quartered strawberry to each mold.


  • Add kiwi fruit mixture around the strawberries.
  • Add blueberry layer to the mould. Top with a teaspoon of water if necessary to form a seal.
  • Add banana layer.
  • Freeze for six hours or until set.

  • Tips
    -Icy pole moulds are available at most supermarkets, discount and kitchenware shops.
    -Use frozen pineapple, strawberries, blueberries and banana for quicker freezing time.
