Fruited Baked Fish with Oven Baked Rosti

I bought the loveliest fish I have had in a long time - instead of buying from the supermarket, I went to a fish shop and although it was more expensive, it was far fresher and nicer.

So I wanted, once again, to bake instead of fry the meal, and this was delicious. Just make sure you do not over cook the fish or it gets dry.

I also had a few Fremantle sardines which I also baked.

Preparation Time: 30 minutes
Cooking Time: 45 minutes
Serves: 3

For the fish
3 or 4 whiting fillets
1 small Granny Smith apple, grated
1 very small banana
Cheese, grated
Bit of plain flour
1 small egg
Bit of butter
Dash of nutmeg
1 tbsp oil

For the potato rosti
1 kg potatoes, peeled
3 tbsp plain flour
Dash of nutmeg
150 g shortcut bacon, diced
Bit of butter

For the fish
Preheat the oven to 180°/160° fan forced.

Coat the fish with the flour and gentle shake off the excess.

Beat the egg, add the oil and a bit of salt and pepper.

Have these mixtures lined up so you can easily dip the fish from one to the next

Dip the fish into the egg, and coat with some breadcrumbs.

Put on some baking paper on a baking tray, with the skin side down.

Add some of the grated apple over each piece.

Then add the sliced banana, and cover with some grated cheese.


Put the bacon on top of this.

Top with a dash of nutmeg on each piece.

Bake for about 35 minutes.

For the potato rosti
Grate the potatoes, and squeeze out some of the water.

Add the flour, nutmeg, and a bit of salt and pepper.

Mix in about 2/3 of the bacon, and put it on some baking paper in a baking tin.


Add the remaining bacon and a few slivers of butter on top.

Bake at about 180°/160° fan forced for about 45 minutes or until the top is a golden colour.

Bake both these dishes at the same time, and serve sliced.
