Fruity Carrot Cake

Carrot cake is one of my favourites, and I am always happy to try new variations. It is usually flavoured with lots of different spices, but in this recipe, those spices are replaced with fruit, making it especially moist. I already have a pre-order for it as a birthday cake - one that is not due until next year.

40g dried unsulphured apricots
50g sultanas
1 orange
135g margarine
½ tbsp bicarbonate of soda
½ tbsp ground cinnamon
20g Truvia sweetener (or 135g caster sugar)
100g icing sugar
2 eggs

  • Grate the carrots, chop the pineapple and apricots, and mix with the sultanas.

  • Zest and juice the orange, and add half to the fruit mixture.

  • Cream together the margarine with sweetener/sugar.

  • Mix together the flour, bicarbonate of soda, and cinnamon.

  • Fold in half the flour to the margarine, and beat in the eggs, before folding in the other half.

  • Stir in the fruit.

  • Press the mixture into a baking tray and cook in the oven.

  • Mix the icing sugar with the remaining zest and orange juice.

  • Spread it over the top of the cake and cut into triangles.
