Fruity Carrot Cake
Carrot cake is one of my favourites, and I am always happy to try new variations. It is usually flavoured with lots of different spices, but in this recipe, those spices are replaced with fruit, making it especially moist. I already have a pre-order for it as a birthday cake - one that is not due until next year.

Cooking Time: 30 minutes
Makes: 8 servings
Ingredients
275g plain wholemeal flour
180g carrots
100g fresh or tinned pineapple
40g dried unsulphured apricots
50g sultanas
1 orange
135g margarine
½ tbsp bicarbonate of soda
½ tbsp ground cinnamon
20g Truvia sweetener (or 135g caster sugar)
100g icing sugar
2 eggs
Method
Pre-heat the oven to 180 &
#3872 ;C/ 160 &
#3872 ;C fan/350 &
#3872 ;F/4 Gas.
Grate the carrots, chop the pineapple and apricots, and mix with the sultanas.
Zest and juice the orange, and add half to the fruit mixture.
Cream together the margarine with sweetener/sugar.
Mix together the flour, bicarbonate of soda, and cinnamon.
Fold in half the flour to the margarine, and beat in the eggs, before folding in the other half.
Stir in the fruit.
Press the mixture into a baking tray and cook in the oven.
Mix the icing sugar with the remaining zest and orange juice.
Spread it over the top of the cake and cut into triangles.
