Funfetti Cookies

These fun, easy to make, tasty cookies are great for kids parties or celebrations. They can be made gluten or lactose free.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Serves: 14

Ingredients
1/2 cup butter or nuttelex (if lactose free)
3/4 cup sugar
1 egg
1 tsp vanilla extract
1 1/2 cups self raising flour
1/4 tsp salt
1/2 tsp baking soda
1 tsp cream of tartar
3/4 cup 100s and 1000s sprinkles

Method
  • Preheat the oven to 175 degrees. Line two baking trays with baking paper.
  • In a large bowl beat the butter and sugar on medium speed until fluffy and light in colour.
  • Mix in egg and vanilla. Set aside.
  • In a separate bowl, whisk the flour, salt, baking soda and cream of tartar.
  • Gradually combine the dry and wet ingredients.

  • Roll 2 teaspoon sized balls in the sprinkles and combine into one ball. Roll the ball in sprinkles and place on the baking tray. Press down slightly. Repeat with the remaining dough.
  • Roll two balls in sprinkles, combine and roll in sprinkles again before baking

  • Bake the cookies for 10-12 minutes until slightly browned. Cool on a wire rack.

  • Freeze the dough, defrost for 15 minutes and roll in sprinkles before baking.
