Garlic chilli prawns


These garlic and chilli prawns are easy to do and make a lovely starter. They are marinaded in lemon juice which starts the cooking process and keeps them tender.

Preparation Time: 15 minutes plus 20 minutes marinading
Cooking Time: 5 minutes
Makes: 4 servings

Ingredients
16 prawns (the bigger the better)
1 lemon
1/2 red chilli or teaspoon of chilli flakes
4 cloves garlic
olive oil



Method
  • If your prawns have shells on then remove these first. You can leave the tail on if you like.

  • Butterfly the prawns by running a sharp nice down the inside length but not all the way through, then flatten out.

  • In a dish, squeeze in the juice of the lemon.

  • Remove the seeds from the chilli, finely chop and add to the lemon juice.

  • Crush the garlic and add to the chilli and lemon juice.

  • Add your prawns and mix well in the juice.

  • Leave to marinade for 20 minutes.



  • Remove the prawns from the lemon marinade and fry on a medium heat for around 5 minutes.

  • Your prawns are cooked when they turn pink. Be careful not to cook them too long or else they will get chewy.

  • This tasty starter goes well with a little peppery rocket and a garlic herb mayonnaise.
