This quick people pleaser is great on antipasto platters or served with soup or pasta. It is yeast free and can be made gluten and lactose free. It is hard to stop eating once you start!
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Serves: 1 large focaccia

Entertaining made easy - focaccia with balsamic vinegar and oil dipping bowls
Ingredients
3 cups flour (gluten free, if required)
1 tsp salt
1 tbsp baking powder
5 - 6 tbsp oil, plus extra to serve
3⁄4 cup water
2 garlic cloves, finely cut
1 tsp dried rosemary (or 1 tbsp fresh)
1 cup grated cheese (Parmesan, cheddar or lactose free)
Balsamic vinegar, to serve (optional)
Method
Preheat the oven to 210C and lightly grease and line a 22 cm x 32 cm baking tray with baking paper.
Whisk the flour, salt, rosemary and baking powder to combine. Add the garlic, cheese and stir to combine.
Pour in the olive oil and 3/4 cup water and stir to combine. Add more water until the dough holds together and knead gently for 2 minutes.

Mix the dry ingredients, add the garlic and cheese and add oil and water to form the dough
Stretch the dough into the tray and use your fingers to poke holes in the surface.
Drizzle with olive oil and the remaining cheese and bake for 12-15 minutes or until the focaccia sounds hollow when tapped.

Poke holes, drizzle oil and cheese and bake
Cool and serve alone or with balsamic vinegar and oil dipping bowls on a antipasto platter.
