Garlic and chilli prawns
Simple, easy and delicious, this is a classic dish at its best. Serve it as an entrée or a main meal, either way, you’re in for a treat.
Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 2 main or 4 entrée servings
Ingredients
250g butter, softened
6 cloves garlic, crushed
2 long red chilli, finely chopped
Finely grated zest and juice of 1 lemon
1 loaf focaccia, split
2 tablespoons olive oil
500g green prawn cutlets, deveined
½ cup parsley, chopped
Salt and freshly ground black pepper
Lemon wedges to serve
Method
Combine butter, garlic, chilli and lemon.
Season with salt and pepper and mix well.
Spread a quarter of this butter on the cut side of both lengths of focaccia and place on a baking tray.
Preheat grill.
Heat a large frying pan over high heat.
Add olive oil, remaining garlic and chilli butter and prawns.
Cook for 5-6 minutes, or until prawns curl and change colour.
Meanwhile, place focaccia under grill for 1-2 minutes, or until bread is golden.
Add parsley to prawns.
Serve with lemon wedges and focaccia.
