Garlic butter beans and broccoli
This is a quick and easy side dish that works well with most mains. Don’t worry too much about the butter – fat won’t make you fat. Besides, it’s full of greens and garlic, so it’s packed full of nutrients.
Preparation Time: 10 minutes
Cooking Time: 13-18 minutes
Makes: 4 servings
Ingredients
400g green beans, topped and tailed
1 broccoli head, cut into small florets
6 garlic cloves
100g butter
Salt
Method
Boil kettle full of water.
Place broccoli florets and beans into a deep saucepan. Cover with boiling water, and simmer covered on low for three minutes.
Meanwhile, top and tail garlic, and crush and remove skin.
Tip: The easiest way to remove garlic skin is to top and tail cloves, and then firmly press flat side of knife onto garlic clove. The skin should just come away.
Drain broccoli and beans well, and set aside.
Melt butter in frying pan on low-medium heat, then add garlic.
Allow garlic to soften for 2-3 minutes. Stir if necessary, and be careful not to brown.
Add broccoli and beans, and cover for 10-15 minutes, depending on how firm/soft you prefer your vegetables.
Remove from heat, and season to taste with salt.
Serve alongside your chosen main, and enjoy.
