
A great Sunday lunch
There can't be much more comforting than a home cooked roast chicken especially on a Sunday with family to share the meal with. You can easily just shove a chicken in the oven and get great results but if you're looking for something a little different but still simple then try this. The ingredients are for a 2kg chicken but you can easily scale up or down and you don't need to be too exact.
Preparation Time: 10 minutes
Cooking Time: 20 minutes per 500g plus 20mins
Makes: 4 servings
Ingredients
2kg whole chicken with neck and giblets removed
50g butter
4 cloves garlic
Small handful of fresh thyme
Method
At the neck end of the chicken, slip your fingers between the skin and meat to gently separate them.
Peel and finely chop the garlic
Soften the butter slightly and mix in the garlic & thyme
Push the garlic thyme butter into the space created between the skin and meat of the chicken
Roast in an oven at 170 degrees C
Baste the chicken a few times during the cooking
Remove from oven and allow to rest for 10 minutes before serving.
The skin will be lovely and crisp and the garlic thyme butter adds another dimension. Serve with thick cut crusty white bread in the summer or roast potatoes in winter.
