Garlic Chilli Prawns

A fresh and simple seafood dish.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 2 servings

Ingredients
300g green prawns with the tails on
3 medium tomatos
2 heaped tsp crushed garlic
2 chillis
Chicken stock cube
1tbs dried mixed herbs (basil, oregano, parsley)
1/4 cup of ricotta or danish fetta cheese
salt & pepper
1 cup of boiled white rice

Method
  • Roughly chop the tomatos and put them into a saucepan with the herbs, chicken stock, garlic & chilli.



  • Bring to the boil and then simmer for 10 minutes until the sauce reduces and thickens.



  • Season to taste.
  • Add the cheese to make the sauce creamy.
  • Add the deveined prawns and cook until they turn pink.



  • Serve on a bed of rice and garnish with a sprinkle of cheese.
