Garlic Mushrooms on Toast

Posted 2014-12-05 by Lindsay Lawfollow
These buttery garlic mushrooms are excellent served on toasted sourdough bread. They are a real suppertime treat.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 4 servings

Ingredients
100g butter
2 cloves of garlic
Squeeze of lemon juice
Fresh parsely (optional)
400g mushrooms
Sourdough bread

Method
  • Preheat the oven to 180 Celsius.
  • Take the butter out of the fridge and allow to soften. It should be at the kind of consistency that makes it easy to beat with a spoon.
  • When the butter is ready, crush the garlic cloves finely and then beat into the butter until smooth. Add a splash of lemon juice and some finely chopped fresh parsley, if you are using it.

  • Gently wipe the mushrooms to remove any remaining dirt. Pull of the stems. Place the heads of the mushrooms and the stems in a baking dish.

  • Dot a small spoonful of butter in the cup of each of the mushrooms.

  • Bake in the oven for about 20 minutes until the mushrooms are cooked through.

  • Slice and toast some chunky slices of sourdough or other rustic bread.

  • Spoon the mushrooms onto the bread and serve.

  • Variations:
Add some fresh, chopped tarragon to the butter.
Sprinkle some Gruyere over the mushrooms on toast and pop them back under the grill to melt.
