Garlic Mushrooms on Toast
These buttery garlic mushrooms are excellent served on toasted sourdough bread. They are a real suppertime treat.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 4 servings
Ingredients
100g butter
2 cloves of garlic
Squeeze of lemon juice
Fresh parsely (optional)
400g mushrooms
Sourdough bread
Method
Preheat the oven to 180 Celsius.
Take the butter out of the fridge and allow to soften. It should be at the kind of consistency that makes it easy to beat with a spoon.
When the butter is ready, crush the garlic cloves finely and then beat into the butter until smooth. Add a splash of lemon juice and some finely chopped fresh parsley, if you are using it.
Gently wipe the mushrooms to remove any remaining dirt. Pull of the stems. Place the heads of the mushrooms and the stems in a baking dish.
Dot a small spoonful of butter in the cup of each of the mushrooms.
Bake in the oven for about 20 minutes until the mushrooms are cooked through.
Slice and toast some chunky slices of sourdough or other rustic bread.
Spoon the mushrooms onto the bread and serve.
Variations:
Add some fresh, chopped tarragon to the butter.
Sprinkle some Gruyere over the mushrooms on toast and pop them back under the grill to melt.
