Garlic Pancetta and Butter Steak
A perfectly cooked steak for all occasions. Cooking steak in butter and a few slices of pancetta rather than oil, tenderises the meat and makes a mouth-watering, flavour-rich wholesome dinner. Served with your favourite sides or salad, this delicious steak also produces its own aromatic sauce.
Most steak is tough to eat the next day, but if you happen to have left over steak, rest assured, it will not go tough due to fat from the butter and pancetta which keeps it tender. Once you re-heat it, all the juices come to the fore, making it a perfect second night's dinner.
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 4 servings
Ingredients
4 beef steaks (rump, sirloin, or eye fillet)
2 cloves of garlic
4 to 5 pieces of pancetta
2 tablespoons of butter
Method
Dry the steak in some paper towels.
In a frying pan, fry the pancetta until its oil spreads over the pan.

Place the steak in the frying pan. Two at a time to cook evenly is a good idea to sear it properly.

Turn the steak once and set aside. Place the other two pieces in the pan and cook on the pancetta. When all four pieces of meat are seared, set aside.

Add butter and garlic to the pan and heat lightly.

Add all the pieces of steak and cook for a few minutes until the steaks are tender. If you prefer your meat on the raw side, only cook for two minutes longer, turning once,
Leave the steaks sizzling on high heat until you are satisfied.

Serve with potatoes, pasta or salad.
