Garlic Parmesan Roast Potatoes

Makes: 2 servings
Ingredients
500g potatoes
1 tablespoon olive oil
2 cloves garlic
1 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/3 cup shaved Parmesan
Salt and ground black pepper, to taste
1 tablespoon unsalted butter
2 tablespoons fresh parsley
Method
Preheat oven to 200 degrees C. Lightly oil a baking tray or use baking paper.
Slice the potatoes and place them in a bowl. Toss with olive oil, minced garlic, thyme, oregano, basil and Parmesan, season to taste.
Once the potatoes are covered spread them out onto the tray and bake for 25-30 minutes. Flip the potatoes once at 15 minutes.
Remove potatoes from the tray and place in a bowl, stir in the butter until melted.
Garnish with fresh chopped parsley and devour hot.
