Garlic Pot Roasted Chicken

A perfect Sunday roast lunch or dinner for a family of four. Easy to prepare and cook makes it's a great dish for the lazy relaxing weekend.



Preparation Time: 10 minutes
Cooking Time: 1 hour 30 minutes
Makes: 4 servings

Ingredients
1 whole chicken
1 lemon, thickly sliced
12 cloves garlic
8 sprigs thyme
12 chat potatoes
olive oil, for brushing
12 sage leaves
sea salt
1 cup chicken stock

Method
  • Preheat the oven to 150C.

  • Wash and dry the chicken and place the lemon, garlic and thyme inside the cavity.



  • Place in a large ovenproof pot with a lid. Place the potatoes around the chicken. Brush the chicken with oil and sprinkle the sage and salt.

  • Pour the stock into the bottom of the pot and cover with the lid. Bake for 1 hour.



  • Remove the lid and bake for a further 30 minutes or until the chicken is golden and tender.





  • To serve, slice the chicken, place on plates with the potatoes and spoon over the pot juices.
