Garlic Prawns on Potato and Rocket Rosti
Garlic prawns on their own are delicious, and are even more delicious made on a potato and rocket rosti, with a yogurt sauce.
I also made a honey and rocket salad to go with these.

Serves: 2 - 3
Ingredients
For the prawns
3 cloves garlic, chopped finely
500 g green prawns, peeled, tails left on
For the sauce
Just over ¼ cup Greek yogurt
1 tbsp garlic chives
1 tbsp parsley, chopped
1 tbsp thickened cream
½ tbsp basil, chopped (optional)
Potato rosti
450 g potatoes
½ cup rocket, roughly torn
1 tbsp plain flour
Method
For the sauce
Combine all the ingredients, add salt and pepper to taste, and mix well.
For the potato rosti
Peel and grate the potatoes, and squeeze out as much moisture as you can - I always do this in a clean tea towel.
Combine the potato, rocket and flour in a bowl, add some salt and pepper to taste, and then mix it well.
Heat a bit of oil in a non stick pan, and cook the mixture, using about a quarter of it for each potato rosti - I did two at a time.
Press the mixture down a bit to form about a 12 cm rosti, and cook over a medium heat for about 6 - 7 minutes or until it is golden on the bottom.
Turn and cook a further 5 minutes on the other side.
Drain on some paper towel and put in a very low oven to keep warm while you cook the rest.
For the prawns
Mix about 2 tbsp olive oil and the garlic in a small saucepan, and cook over a low heat for 6 - 8 minutes or until the garlic begins to change colour.
Meanwhile, heat a tbsp oil in a large frying pan, and add the prawns and cook for a minute.
Add the oil mixture and cook a further 1 - 2 minutes, making sure you do not overcook the prawns or they will become tough.
To assemble
Put a potato rosti on each serving plate, add some of the yogurt sauce.
Top each one with some garlic prawns.
Drizzle with a little of the garlic mixture left over, and serve. I served with my rocket salad.
