German Apple Cake

Called 'Apfelkuchen' in German, this apple cake is light, juicy, and refreshing.

Preparation Time: 35 minutes
Cooking Time: 40 minutes
Serves: 8

Ingredients
3 granny smith apples
1 tbsp lemon juice
225g plain white flour
2 tsp baking powder
2 tbsp Truvia sweetener (or 100g caster sugar)
125g margarine
3 eggs
1 ½ tbsp Demerara sugar
½ tsp ground cinnamon

Method
  • Cream the margarine with sweetener/caster sugar.
  • Beat in the eggs and fold in the flour and baking powder.

  • Pour the mixture into a 23cm cake tin.
  • Pre-heat the oven to 170 & #3872 ;C/ 150 & #3872 ;C fan/ 350 & #3872 ;F/ 4 Gas.
  • Peel, core, and chop the apples into wedges.
  • Mix them in lemon juice, Demerara sugar, and cinnamon.

  • Press apple wedges on down into the cake mixture.
  • Bake in the oven for forty minutes.
