German Apple Cake
Called 'Apfelkuchen' in German, this apple cake is light, juicy, and refreshing.
Preparation Time: 35 minutes
Cooking Time: 40 minutes
Serves: 8
Ingredients
3 granny smith apples
1 tbsp lemon juice
225g plain white flour
2 tsp baking powder
2 tbsp Truvia sweetener (or 100g caster sugar)
125g margarine
3 eggs
1 ½ tbsp Demerara sugar
½ tsp ground cinnamon
Method
Cream the margarine with sweetener/caster sugar.
Beat in the eggs and fold in the flour and baking powder.
Pour the mixture into a 23cm cake tin.
Pre-heat the oven to 170 & #3872 ;C/ 150 & #3872 ;C fan/ 350 & #3872 ;F/ 4 Gas.
Peel, core, and chop the apples into wedges.
Mix them in lemon juice, Demerara sugar, and cinnamon.
Press apple wedges on down into the cake mixture.
Bake in the oven for forty minutes.
