Ginger And Garlic Purple Cabbage
Cabbage is underrated, and often overlooked. This ginger and garlic sautéed red cabbage, however, will make you forget the rather soggy unappealing boiled cabbage you might be envisioning. Get ready for proper food and whip this up as a side for tonight's main meal.
Preparation Time: 2 minutes
Cooking Time: 10 minutes
Makes: 4 servings
1/2 purple cabbage head
Thumb of fresh ginger
2 garlic cloves
Tsp black pepper
2 tblsp coconut oil
It should remain crunchy to the taste, but will soften slightly.
Serve as you like. It stores well and can be eaten the next day for a more exciting side dish to your lunch.
This certainly made me re-think about cabbage and helped me add vitamin c and iron into my diet. Happy days.
