Ginger Chicken Chinese Broccoli
In Chinese cuisine, stir-fry is one of the quickest and easiest well balanced dish. All you need is 1 choice of meat and 1 choice of vegetable to make a heartwarming simple dish for lunch or dinner. I love the combination of chicken & vegetable. In this recipe, I am going to use Chinese Broccoli.
Preparation Time: 10 minutes

Makes: 6 servings
Ingredients
8 chicken thigh fillets, cut into bite-size pieces
1 bunch Chinese Broccoli, sliced into pieces
2 tablespoons vegetable oil
1/2 cup water
Marinade
1 piece thumb-size ginger, peeled and cut into thin strips
2 clove garlic, peeled and finely diced
2 tablespoons oyster sauce
1 tablespoon soy sauce
1 teaspoon sesame oil
2 teaspoons cornstarch
3 dashes white pepper powder
a pinch of salt
steamed jasmine rice, to serve
The Ingredients
Method
Combine all the marinade ingredients in a bowl, add the chicken pieces and mix well. Leave it to marinate for 10 minutes.
Heat 2 tablespoons of vegetable oil in a wok on high heat. Add in the ginger and stir-fry until aromatic. Add in the garlic and stir-fry until aromatic.
Add in the marinated chicken and quickly stir-fry until the surface of the chicken turn turn opaque or white.
Add in the Chinese Broccoli and do a few quick stirs. Pour in a half cup of water and cover. Let it steam until the Chinese Broccoli is cooked but remain crisp. Do not overcook.
Dish out and serve immediately with steamed jasmine rice and garlic chilli sauce (optional).
Notes
You can substitute Chicken with Pork, Beef or Seafood.
You can substitute Chinese Broccoli with any Asian greens.
For vegetarian option, substitute meat with tofu.
Garlic Chilli Sauce can be found in Asian grocery.
