Ginger Chicken Chinese Broccoli

In Chinese cuisine, stir-fry is one of the quickest and easiest well balanced dish. All you need is 1 choice of meat and 1 choice of vegetable to make a heartwarming simple dish for lunch or dinner. I love the combination of chicken & vegetable. In this recipe, I am going to use Chinese Broccoli.



Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 6 servings

Ingredients
8 chicken thigh fillets, cut into bite-size pieces
1 bunch Chinese Broccoli, sliced into pieces
2 tablespoons vegetable oil
1/2 cup water

Marinade
1 piece thumb-size ginger, peeled and cut into thin strips
2 clove garlic, peeled and finely diced
2 tablespoons oyster sauce
1 tablespoon soy sauce
1 teaspoon sesame oil
2 teaspoons cornstarch
3 dashes white pepper powder
a pinch of salt

steamed jasmine rice, to serve

The Ingredients


Method
  • Combine all the marinade ingredients in a bowl, add the chicken pieces and mix well. Leave it to marinate for 10 minutes.



  • Heat 2 tablespoons of vegetable oil in a wok on high heat. Add in the ginger and stir-fry until aromatic. Add in the garlic and stir-fry until aromatic.



  • Add in the marinated chicken and quickly stir-fry until the surface of the chicken turn turn opaque or white.



  • Add in the Chinese Broccoli and do a few quick stirs. Pour in a half cup of water and cover. Let it steam until the Chinese Broccoli is cooked but remain crisp. Do not overcook.



  • Dish out and serve immediately with steamed jasmine rice and garlic chilli sauce (optional).



  • Notes
  • You can substitute Chicken with Pork, Beef or Seafood.
  • You can substitute Chinese Broccoli with any Asian greens.
  • For vegetarian option, substitute meat with tofu.
  • Garlic Chilli Sauce can be found in Asian grocery.
