Gingered Chicken Balls with a Mango Sauce
These chicken balls are both tasty and not too difficult to make.
The mango sauce is an extra added delight to go with these small morsels.
Preparation Time: 25 minutes
Cooking Time: 10 minutes
Serves: 3
Ingredients
2 chicken thighs
1 spring onion
3 tbsp breadcrumbs
½ tsp ginger, ground
Bit of ground coriander
¼ tsp salt
For the Mango sauce
½ small onion
½ clove garlic
1 tbsp oil
About 95 g mango, pureed (I used tinned)
½ tbsp ginger
Method
For the chicken
Place the chicken thighs in a food processor with the spring onion.
Process until finely chopped but not paste like.
Alternatively you could mince the chicken.
Mix in the breadcrumbs, ginger, salt and coriander until just combined.
Using a tbsp of the mixture, roll into balls with wet hands.
Drop the balls into boiling water and simmer for about 3 - 5 minutes or until the balls come to the surface of the water and are cooked through.
Remove them with a slotted spoon and drain well.
Serve with the mango sauce - you could put a toothpick in them to serve.
For the mango sauce
Peel and chop the onion.
Crush the garlic and heat the oil in a saucepan - saute the onion, garlic and ginger until the onion is clear.
Put the mango puree and onion mixture in a blender or food processor and process until pureed.
Return to the saucepan and heat until the mixture is like a sauce.
Serve warm as a dipping sauce with the chicken balls, and salad.
