Gluten and Dairy Free Vegan Muffin

These muffins are dairy, egg and gluten free but they are super moist and very easy to make with the most basic ingredients.

Preparation Time: 10 minutes
Cooking Time: 25-30 minutes
Serves: Approximately 8 muffins

3/4 cup Sorghum Flour sifted
2 ripe bananas
6 tbsp sugar
1/4 cup oil
1/2 tsp baking powder
1/2 tsp baking soda
1 pinch of Salt
1/2 tsp vanilla essence
Nuts for topping (optional)

Preheat the oven at 180 degree C. Grease a muffin tray and keep it ready.

Mix the sorghum flour, baking soda, baking powder and salt in a bowl and set aside.

Mash 2 ripe bananas in a bowl. Add oil and sugar and mix it until sugar dissolves.

Add the dry ingredient mix to it slowly. Fold the mixture until all the flour is incorporated. Do not overdo it. If the mixture looks too thick, add a tablespoon of water.

Fill each muffin cup about 3/4 full with the batter.

Top it with nuts if desired.

Bake it for 25-30 minutes in the oven or until done.

Remove them from oven and place them on a wire rack.

Let them cool and serve.
