Gluten Free AlmondBased Pizza
For anyone who's trying to avoid gluten, pizza is a meal that you pretty much have to go without. Or, you end up using alternatives for the base that don't ever capture that original flavour.
I think this recipe recreates the typical pizza taste very closely. It's made with almond meal, and zucchini which helps it go further and feel less dense, without injecting any unexpected flavours (my topping aren't traditional ones, but feel tree to add cheese: that works fine too).
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Makes: 1 pizza
Ingredients
1 cup Almond Meal
1/2 Zucchini
1 Egg or 1 tbsp Chia Seeds (depending on your diet preferences)
Tomato Paste
Mixed Herbs
Your chosen toppings (I used chicken, avocado and capsicum)
Method
Let the chia seeds soak in 1/3 cup of water for 10 minutes, or until water is absorbed.
Preheat oven to 180 degrees.
Grate the zucchini.
Mix the zucchini, almond meal, mixed herbs and either the chia seeds or the egg (I actually added both to this recipe, and it worked well). If the mixture is too dry, just add some water.
Dont be afraid to be generous with the herbs
Spread the mixture over a pizza try lined with baking paper. Make sure it's not too thick in the middle, as this area can stay quite moist.
Place the base in the oven for 15-20 minutes. It needs to be firm before you put the toppings on.
When base is done (its surface should be almost hard) add the tomato paste and more mixed herbs (if you don't have mixed herbs, basil is a good one to use).
Add your chosen toppings.
Return the pizza to the oven for as long as it takes of cook your toppings/melt the cheese.
