Gluten Free Apple Pear and Blackberry Pie

Wild blackberries grow in a wood near my house, so once I'd spent the morning filling my empty jar I decided to make apple and blackberry pie - it would be a shame to waste such delicious and fresh fruit after all.


Preparation Time: 15 minutes
Cooking Time: 45 minutes
Makes: 10 servings

6 satsumas/3 oranges
3 Apples
5 Pears
150g Blackberries
150g Butter
200g Spelt flour
Splash of milk
150g Caster sugar

Required ingredients


Make your pastry first. Place the flour, butter, milk, sugar and egg in a food processor and blitz for one minute.

Once your pastry has come together roll into a ball on a floured surface.

Wrap the pastry in clingfilm/a plastic bag and place in the fridge for at least 30 minutes.

While the pastry is in the fridge peel and roughly chop the apples and pears.

Roll out the pastry and place inside the greased pastry bowl.

Blind bake for 25 minutes (fan oven), once removed fill with the chopped fruit.

Peel the oranges and squeeze out the juice into the pastry filled dish.


Add half of the sugar and gently stir.

Pour in the blackberries and add the rest of the sugar, without stirring this time.

Cover with the rest of the pastry and brush with a tsp of milk for a shiny top.

Place in the oven for 30 minutes gas mark 5/180 degrees.

Remove from the oven and allow to cool for at least 30 minutes before serving with custard/double cream.
