Gluten Free Brownie Base Cheesecake
As some of you may know making a gluten free cheesecake base can be a bit of a challenge, biscuits are usually hard to find and so expensive and if the recipe asks for a flavour besides chocolate you have no hope. So making the brownie as the base is amazingly quick, cheap and easy.
Preparation Time: 25 minutes and 3 hours cooling/ refrigeration
Cooking Time: 25 minutes
Makes: 9-12 servings
Ingredients
Brownie base:
150g gluten free dark chocolate
125g unsalted butter, chopped
1 egg
2/3 cup caster sugar
3/4 cup gluten free plain flour
1/4 cup gluten free self raising flour
Cheesecake topping:
250g gluten free cream cheese, softened
1 teaspoon vanilla essence
1/3 cup caster sugar
1 egg
125ml/ 1/2 cup cream
Method
Preheat oven to 160C Fan forced or 180C. Line baking pan with baking paper, extend edges over the size by about 4-5cm, I used a square pan, 19-20 cm.
In a double boiler place chopped butter and chocolate, melt and remove from heat. Cool.
Meanwhile whisk sugar and egg together, stir into chocolate mixture until combined.
Sift the flour into the mixture and whisk until smooth.
Bake for 10 minutes, meanwhile make cheesecake topping.
Beat cream cheese on high until smooth.
Add vanilla, egg and caster sugar.
Once combined add cream.
Remove brownie from oven and pour cheesecake straight on top and bake for another 15 minutes.
Cool inside oven with door open. Refrigerate two and half to three hours before serving.
Serve alone, with fresh fruit, or if you’re feeling indulgent, a little bit of chocolate sauce drizzled on top.
