Gluten Free Chicken Nuggets
When my dad he was told to try a gluten free diet it really helped him. But going gluten free meant giving up things he liked to eat occasionally like chicken nuggets. So when I found these gluten free corn crumbs I was delighted I could now make an old time favourite of dad's but gluten free. Great as a snack on their own or paired with some sides it can become a meal.
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 20 nuggets
Ingredients
2 breasts of chicken
Gluten free corn crumbs (see notes)
1 cup of gluten free flour
2-3 eggs
Oil for cooking
Method
Cut chicken breasts into pieces, you should get about 5 pieces per breast.
Heat oil in a fry pan to shallow fry nuggets while you prepare the nuggets.
Place corn crumbs in one bowl, beaten eggs in a second bowl and flour in the third.
Coat chicken pieces in flour then dip in egg and then in the crumbs.
Place on a plate and continue to coat each piece of chicken .
Shallow fry chicken 2-3 pieces at a time, turning every two to three minutes.
Chicken takes 6 minutes to cook when the oil is really hot, if you're unsure pick a big one and take it out and cut it in half and see if it's cooked inside.
When ready take out and drain on paper towel to soak up the excess oil
Wait a few minutes for the oil to reheat and start the next batch
Notes
Gluten free corn crumbs are available at IGA supermarkets. They are different to regular bread crumbs but they are great. If you can't find these any gluten free bread crumbs will work.
