Gluten Free Chocolate Sorbet
This is super rich but amazingly delicious and easy to make. I used an ice cream maker but don’t think it’s really necessary for this recipe, as long as you use a slow/ kneading setting with a beater attachment (not a whisk) you should be able to achieve the same results.
Preparation Time: 30 minutes
Cooking Time: 8 hours (cooling, freezing)
Makes: 1 servings
Ingredients
1 1/2 cups water
1/2 cup caster sugar
1/4 cup brown sugar
1/2 cup gluten free cocoa powder
Method
Add sugar and water together in a small saucepan over medium heat, when sugar has dissolved sift in the cocoa powder and whisk until smooth.
Boil and thicken until a candy thermometer hits 200F this will take 10-15 minutes, remove from heat to cool. Put in refrigerator for 2 hours or until completely cool.
Use an ice cream maker, Set on knead setting for 10 minutes or until mixture thickens slightly and has a smooth consistency. Place in freezable container and put in freezer until sorbet is set.
