Gluten Free Lime And Berry Friands
These friands are crispy on top with a deliciously dense centre, and the blueberries and lime adding a lovely sweetness and tang. And being gluten free they are a fantastic gluten free option for people with gluten intolerance or coeliac disease.
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: 24 mini friands
Ingredients
3 egg whites
1 tsp finely grated lime rind
90g butter, melted
60g almond meal
120g soft icing sugar mixture
35g rice flour
24 fresh blueberries
1 tbsp extra icing sugar (for dusting)
Method
Combine egg whites, lime rind, melted butter, almond meal, sugar and rice flour in a medium bowl. Mix until smooth.
Spoon mixture into mini muffin cases until 2/3 full.
Place a single blueberry in the centre of each friand.
Bake friands for 15 - 20 minutes or until very golden on top. Stand in tin for 5 minutes then cool completely on a wire wrack.
Dust with icing sugar and serve. Perfect with a cup of tea.
