Gluten Free Mulberry and Coconut Teff Flour Loaf
I recently read about teff flour and decided to try cooking with it. Although I am not gluten intolerant, this is a great product for those who are.
It is described as "an annual grass, a species of lovegrass, native to Eritrea and Ethiopia".
I also made my own [link http://recipeyum.com.au/make-your-own-dairy-free-almond-milk/ almond milk]. If using a commercial one, use less sweetener in the mixture.
Preparation Time: 10 minutes
Cooking Time: 45 minutes
Makes: 8 servings
Ingredients
1 cup of [link http://reviewclue.com.au/teff-gluten-free-flour/ Teff Flour] (Available from Woolworths)
1½ tsp baking powder
¼ cup coconut flakes plus a bit extra for garnish
¾ cup almond meal (or ground your own almonds)
2 eggs
1 cup almond milk
4 tbsp honey
1½ cups mulberries
Method
Preheat the oven to 180°/160° fan forced. Line a small to medium sized loaf tin with baking paper.
Pour the almond milk into a large bowl.
Add the eggs, honey, and coconut oil, and mix well.
Add the teff flour, almond meal, coconut flakes, and baking powder and mix well till it is combined thoroughly.
Gently stir in the mulberries.
Pour this mixture into the prepared tin.
Add some extra coconut flakes on the top (optional) and bake in the oven for about 45 minutes.
Take out of the oven and cool slightly before taking out of the tin.
