GMV's Basil Pesto Chicken Sandwich with Trio Cheese

This cafe-style pesto chicken sandwich with trio cheese is simply amazing.

Heap this chicken pesto between two fresh baked slices of bread. It taste rich, filling and super yummy! You have yourself one delicious sandwich!

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 6 servings

250g fresh chicken thigh fillets
1 loaf of olive batard bread
100g fresh baby rocket salad
6 tablespoon prepared basil and macadamia pesto
50g parmesan cheese
100g mixed cheese
100g roasted capsicum
1 tablespoon extra virgin olive oil

Bring a pot of water to boil over medium high heat. Add a teaspoon of salt and the chicken fillets.
Reduce heat to low. Simmer for 15 minutes or until chicken is just cooked through.
Remove from heat. Cut the chicken into bite-size chunks and allow to cool.

In a food processor, add in the chicken pieces, pesto paste and a handful of mixed cheese. Season with salt and pepper to taste.

Half way through blending, add a further spoonful of cheese and oil olive.

To build the sandwich:

Place baby rocket on the olive batard bread. Scoop 3 tablespoonful of chicken pesto on top.
Sprinkle a handful of shaved Parmesan cheese.
Lightly season with black pepper.

For a cafe-style meal, serve with a golden runny egg.

Cafe Style


Layer with roasted capsicum stripes on the chicken pesto.
Sprinkle freshly shaved parmesan cheese on top.
Season with black pepper.
Put slices together and place onto a pre-heated sandwich press.

Lunchbox Style

Press until warmed through, cheese has melted and the bread is toasty and crispy.

This chicken pesto is perfect on sandwiches or serve with crackers, tortilla chips.

So yum!
