Muffins are often a sweet snack that people pick up on the way to work to have for breakfast or lunch. Usually they are packed with sugar, fat, and lots of calories. But it does not have to be that way. Muffins can be wholesome, healthy, and savoury, all of which make for a much better way to start the day or get you through the afternoon. You can make your own to take to work with you, or enjoy them as a snack at home. I made mini goat cheese muffins using cup cake moulds, but you can also use deeper muffin tins too. Based on the brands I used, each muffin is about 84 calories.

Makes: 20 servings
Ingredients
300g wholemeal flour
135g goat cheese
1 red bell pepper
½ tsp baking powder
½ tsp bicarbonate of soda
1 tsp dried parsley
225ml unsweetened almond milk
3 eggs
Method
Pre-heat oven to 190 ༠C/ 170 ༠C fan/350 ༠F/4 Gas.
Mix the flour, baking powder, bicarbonate of soda, and parsley together.
Chop the red pepper and cheese, then mix into the flour.
Beat in the eggs and milk.
Spoon the mixture into cup cake cases.
