Golden Pudding
What could be more British than a steamed pudding? They may take longer than baking a cake, but it is well worth the wait. This is my great great grandma's recipe, and as with all steamed puddings, goes down best when drenched in
custard . When I first saw what it was called, I thought it was going to be filled with golden syrup, but in this instance the 'golden' refers to marmalade. I think my great great grandma must have had a thing for marmalade, because her recipe book also contained
stick marmalade tea loaf . Based on the brands I used, each serving is about 261 calories.
Preparation Time: 25 minutes
Cooking Time: 2 hours
Makes: 4 servings
Ingredients
100g wholemeal self-raising flour
75g margarine
50g Truvia sweetener (or caster sugar if you prefer)
100g wholemeal wheatgerm bread
1 large egg
1 tbsp marmalade
Method
Melt the margarine and marmalade together in a saucepan.
Beat in with the egg.
Crumble the bread into breadcrumbs and mix in with the flour.
Beat the egg mixture into the flour.
Spoon the mixture into a pudding basin and cover it with tin foil (I secured it with a rubber band).
Steam the pudding in simmering water.
Turn the pudding out onto a plate and serve.
