Golden Salted Egg Yolk Prawns
Fried prawns coated in salted egg yolks and butter is double delicious. Similar prawn recipes are very popular in some Chinese restaurants.
In Australia, I find that only cooked salted eggs can be bought from some Asian groceries whereas the local fresh salted egg yolks can be bought at some Asian poultry shops.

Makes: 4-5 servings
Ingredients
10 king size green prawns
4 fresh homemade salted egg yolks, steamed
1-2 tbsp butter
2 garlic cloves, peeled and minced
1 tbsp fresh chopped coriander
1/2 tsp salt
1/8 tsp white pepper
1-2 tbsp extra light olive oil
coriander leaves to garnish
Method
Mash the steamed salted egg yolks. Set aside.
Trim legs and eyes of the prawns. Devein, rinse and pat dry.
Dust the prawns with flour.
Heat oil evenly on a frypan over medium heat.
Add minced garlic and chopped coriander. Saute for half minute.
Place prawns in pan and fry each side for about 2 minutes until brown.
Meanwhile, sprinkle with some salt and white pepper on them during pan frying.
If you like more crisp prawn shells, use shallow fry or deep fry.
Transfer to a plate and set aside.
It seems to be ready and yummy to eat, but I need to add an extra tasty coating on the prawns.
Add butter and mashed salted egg yolks in a clean frypan over low heat.
Stir thoroughly until light and fluffy.
Return the fried prawns. Toss and coat the prawns with mixture.
Transfer to serving plate. Garnish with coriander leaves.
Serve immediately or warm.
Hint
Use peeled prawns to make this a triple delicious dish as well as you can also share them with kids.
