Gooey Italian Almond Biscuits
These biscuits are different to the normal almond biscuits, in that they turn out rather sticky, and moist.
They are quite a basic recipe, but the addition of the cherry or almond on the top gives them that extra appeal and the moist, marzipan flavour makes them difficult to stop eating.
I do not buy almond meal; I use fresh almonds, and ground them myself - this way, they are not so fine and have small bits of almonds in them, which I prefer in my baking.
Preparation Time: 20 minutes
Cooking Time: 8 - 9 minutes
Makes: 25 biscuits
Ingredients
2 small egg whites, slightly beaten
200 g ground almonds
120 g caster sugar
1 drop vanilla
1 - 2 drops almond essence
60 g icing sugar
A few glace cherries to decorate
A few blanched almonds to decorate
Method
Preheat the oven to 160° fan forced, or 180° ordinary oven.
If you are grinding the almonds yourself, do this now.
In a large bowl, mix the ground almonds, egg whites, caster sugar, vanilla and almond essence, and mix well.
This mixture should be nice and moist
Put the icing sugar on a flat surface.
Roll small amounts of the mixture in your hand, and then roll them lightly in the icing sugar.
Flatten slightly, and put on a baking tray lined with baking paper, making sure you leave some space in between each one, as they spread slightly.
Add half a cherry, or a blanched almond on top and press down lightly.
Bake for about 7 - 9 minutes, or until just starting to change colour.
Do not cook longer than 10 minutes, or they will dry out
Allow to cool, lift with a spatula, and serve.
