Gourmet Omelette
Every time I think of omelette, I think bland egg that's whipped together instead of being fried.
If you're like me, who isn't a big fan of omelette, then this is the recipe for you.
It's got a multitude of ingredients that are put together to make an omelette all the more delicious and nutritious.
You name it, it's there. Veggies, cheese, herbs, the lot. You could also add some yummy haloumi on the side, if your tummy isn't satisfied enough.
Preparation Time: 5 minutes
Cooking Time: 10-20 minutes
Makes: 2 servings
Ingredients
6 eggs
1 capsicum - red/green or 1/2 red capsicum and 1/2 green capsicum
200g bacon bits
1 tin sweet baby corn kernels
200g button mushrooms (small mushrooms)
Parmesan cheese (grated)
1 packet haloumi antipasto
Method
Slice the mushrooms and chop the capsicum into little pieces.
Crack 6 eggs into a measuring jar or large bowl and beat together until you get a smooth consistency.
Heat some oil in a large frying pan and then add the mushroom, capsicum, bacon bits and corn kernels into the frying pan.
Pour the beaten egg mixture over the ingredients in the frying pan.
Add some grated parmesan cheese over the egg mixture and cook over a medium heat.
Keep cooking until the omelette has a thick texture and looks like all the ingredients are packed together. Remove from heat and leave aside.
Chop the haloumi into little pieces
In another frying pan, cook the haloumi pieces for about a minute or two till they turn brown on all sides.
Serve haloumi on the side with the omelette and enjoy!
