Grandmas Banana Cake
Usually I tweak recipes to make them healthier but when a cake is this good and the recipe is your grandmas you don't change a thing! The cake is soft and moist and the icing is beautiful and lemony. It really is the perfect banana cake.
Preparation Time: 10 minutes
Cooking Time: 45 minutes
Makes: 10 servings
Ingredients
Banana Cake
4oz butter
4oz caster sugar
1 egg
3 medium ripe bananas
8oz SR flour
2 tablespoons milk
½ tsp bicarb of soda
Lemon Icing
8 oz icing sugar
3oz butter
3 tsp golden syrup
1 tablespoon lemon juice
Method
Cream the butter sugar until light and fluffy.
Mash bananas and add to the mix with one beaten egg.
Dont be alarmed if its looks like its curdled, its supposed too.
Sift in the flour and stir.
Mix the bicarb of soda with the milk and pour into the mix, the mixture should be quite wet - add more milk if needed.
Pour into a greased loaf tin and bake for 45 minutes at 170C.
Turn out to cool on a wire rack.
For the icing simply beat all the ingredients together, taste and add more lemon if desired.
Smother the cooled cake in icing and enjoy.
Can be stored in the fridge for up to 1 week.
