Grandmas Banana Cake

Usually I tweak recipes to make them healthier but when a cake is this good and the recipe is your grandmas you don't change a thing! The cake is soft and moist and the icing is beautiful and lemony. It really is the perfect banana cake.



Preparation Time: 10 minutes
Cooking Time: 45 minutes
Makes: 10 servings



Ingredients
Banana Cake
4oz butter
4oz caster sugar
1 egg
3 medium ripe bananas
8oz SR flour
2 tablespoons milk
½ tsp bicarb of soda

Lemon Icing
8 oz icing sugar
3oz butter
3 tsp golden syrup
1 tablespoon lemon juice


Method
  • Cream the butter sugar until light and fluffy.

  • Mash bananas and add to the mix with one beaten egg.

  • Dont be alarmed if its looks like its curdled, its supposed too.


  • Sift in the flour and stir.

  • Mix the bicarb of soda with the milk and pour into the mix, the mixture should be quite wet - add more milk if needed.


  • Pour into a greased loaf tin and bake for 45 minutes at 170C.

  • Turn out to cool on a wire rack.


  • For the icing simply beat all the ingredients together, taste and add more lemon if desired.


  • Smother the cooled cake in icing and enjoy.

  • Can be stored in the fridge for up to 1 week.
