A village in Cumbria, Grasmere is probably best known as the home of the Romantic poet, William Wordsworth, but it is also renowned for its wonderful gingerbread. Although the official recipe is a close kept secret exclusive to the region, we can still make our own slight variations. Grasmere Gingerbread is little drier and more crumbly than most, and its appearance reminds me of a sandy beach.

Makes: 20 servings
Ingredients
300g plain wholemeal flour
125g margarine
125g muscovado sugar
50g porridge oats
2 tsp ground ginger
½ tsp bicarbonate of soda
Method
Pre-heat oven to 180༠C/160༠C fan/350༠F/4 Gas.
Blend all of the ingredients together, and put five teaspoons of the mixture to one side.
Press the rest of the mixture into a baking tray.
Scatter the remaining mixture over the top, like a crumble.
Bake in the oven and slice into squares.
