Greek Feta Black Bean Kale Salad
Here is a tasty, colorful, and heart healthy side dish or salad that goes great with any main dish. Great to bring to Holiday parties as a dish to pass.

Ingredients
170 g feta cheese, crumbled
425 g black beans, drained
4 cups egg noodles, precooked, cold
2 cups fresh kale, chopped
2 cups fresh tomatoes, diced
1 cup yellow pepper, diced
1 cup red onion, diced
1/2 cup celery - (diced)
1/4 cup fresh basil (chopped)
2 Tbs. red wine vinegar
1 lemon (juiced)
4 gloves of garlic, crushed
15 peperoncini peppers
4 Tbs. olive oil
2 Tbs. peperoncini pepper juice
1 tsp. oregano
Salt and pepper to taste
Method
Prepare the above ingredients and toss together in a large bowl. Stir until well mixed.
